A classic recipe kicked up with warm maple syrup and fresh berries

Ingredients

  • 2 eggs
  • 1/4 cup heavy cream
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 tablespoon powdered sugar
  • 1/4 cup olive oil
  • 1 cup maple syrup
  • 4 slices potato bread (double-thick slices may also be used)
  • 8 oz fresh mixed berries (strawberries, blueberries, etc.)
  • powdered sugar

Cooking Steps

  1. In a medium bowl whisk together eggs and cream. Add vanilla and cinnamon; mix well. Add 1 tablespoon powdered sugar and whisk until dissolved.
  2. In a skillet heat olive oil over medium heat. In a saucepan heat maple syrup over low heat.
  3. Dip bread in the egg batter, making sure both sides are coated. Place bread in hot skillet. Cook for 3 minutes per side or until golden brown.
  4. To serve, place French toast on a plate, cut in half and drizzle with warm syrup. Garnish plate with fresh berries. Sprinkle entire dish with additional powdered sugar.

Makes 4 servings.
