Blackended Veal Chops

An impressive veal dish that tastes great and can be put together in minutes

Ingredients

  • 1/4 Cup olive oil
  • 4 8oz pieces veal chops
  • 1/4 Cup blackening spice
  • 2 Tbsp. butter unsalted
  • 2 tsp galic chopped
  • 2 tsp shallot chopped
  • 6 morel musrooms halved
  • salt (to taste)
  • black pepper  (to taste)
  • oven rostaed tomatoes
  • white bean ragout

Cooking Steps

  1. On a griddle heat olive oil over medium-high heat. Season veal chops on both sides with Blackening Spice. Pat seasonings into meat. Cook chops on hot griddle until both sides are brown; set aside.
  2. In a sauté pan melt butter over medium heat. Add garlic and shallot; sauté for 2 minutes. Stir in mushrooms; sauté briefly. Season to taste with salt and pepper.
  3. To serve, place White Bean Ragoût in center of a serving dish. Top with veal chops. Top chops with Oven-Roasted Tomatoes and the sautéed mushrooms.
