Blackended Veal Chops
An impressive veal dish that tastes great and can be put together in minutes
Ingredients
- 1/4 Cup olive oil
- 4 8oz pieces veal chops
- 1/4 Cup blackening spice
- 2 Tbsp. butter unsalted
- 2 tsp galic chopped
- 2 tsp shallot chopped
- 6 morel musrooms halved
- salt (to taste)
- black pepper (to taste)
- oven rostaed tomatoes
- white bean ragout
Cooking Steps
- On a griddle heat olive oil over medium-high heat. Season veal chops on both sides with Blackening Spice. Pat seasonings into meat. Cook chops on hot griddle until both sides are brown; set aside.
- In a sauté pan melt butter over medium heat. Add garlic and shallot; sauté for 2 minutes. Stir in mushrooms; sauté briefly. Season to taste with salt and pepper.
- To serve, place White Bean Ragoût in center of a serving dish. Top with veal chops. Top chops with Oven-Roasted Tomatoes and the sautéed mushrooms.
