- 3 cups all purpose flour
- 4 tsp. baking powder
- 1 tbsp. sugar
- 1 tsp. salt
- 1 tsp. baking soda
- 1/4 cup unsalted butter
- 1-1/4 cup buttermilk
- 2 eggs lightly beaten
- 1 tsp. canola oil
- Start by preheating the oven to 350°F. In a large bowl stir together the flour, baking powder, sugar, salt and baking soda with a dinner fork. Cut the butter into the dry ingredients until mixed well.
- In a separate bowl, mix the buttermilk and eggs together. Reserve 2 tbsp. of the buttermilk and egg mixture for brushing on later. Slowly add the egg and buttermilk mixture to the dry ingredients while mixing to control the consistency of the dough.
- Grease a flat baking sheet with canola oil - then with two soup spoons drop the dough in desired size drops onto then pan about an inch apart. Brush the tops with remaining buttermilk and egg mix. Bake for 12 to 15 minutes until lightly brown.
