Smothered Pork Chops
A classic southern dish of seasoned pork chops smothered in a delicious gravy
Ingredients
makes 6 servings
- 1 cup canola oil
- 6 4-ounce pork chops, thinly cut
- Salt
- Black pepper
- 1 1/2 cups all-surface flower
- 2 tablespoons unsalted butter
- 1 large onion, sliced
- 1 cup water
- Drop biscuits (optional, see recipe)
Cooking Steps
- Preheat oven to 350°F. In a large ovenproof frying pan heat canola oil over medium heat. Season pork chops with salt and pepper, then dredge in one cup of flour. Shake off excess flour. Add pork chops to pan and brown on both sides. Remove pork chops and set aside.
- Add butter to pan; let melt. Add onion and cook until almost brown. Stir in the remaining half cup flour and continue to cook until the desired color is reached. Add water and whisk until smooth. Season with additional salt and pepper.
- Return porkchops to pan. Cover and bake 425 minutes. To serve, crumble biscuits on plates and top with pork chops and gravy.
- Note: for dark gravy, cook flour for longer time over low heat. For light gravy, cook flour for less time over higher heat.
