Squash Casserole

A delicious vegetarian dish thats great for guests or the whole family

Ingredients

makes 6 to 8 servings

  • One 0.4 ounce package dry ranch salad dressing mix
  • 1 egg, lightly beaten
  • 8 ounces shredded cheddar cheese (2 cups)
  • 6 to 8 yellow summer squash, cut in 1/4 inch slices
  • 1 medium onion, chopped
  • Salt and ground black pepper
  • 6 to 8 saltine crackers, coarsely broken

Cooking Steps

  1. preheat oven to 350°F. In a large bowl prepare salad dressing according to package directions. Add egg and 1 1/2 cups of the cheese. Add squash and onion. Sprinkle with salt and pepper and toss to coat.
  2. Transfer squash mixture to a 2 quart greased baking dish. Top with remaining 1/2 cup cheese and saltine crackers. Bake 30 minutes or until squash is tender.
