Lemon Raspberry Meringue

Moist spungy pound cake stacked with a decadent lemon curd, fresh raspberries, and topped with meringue

Ingredients

makes 3 servings

  • 2 eggs
  • 2 egg yolks
  • 2 tablespoons finely shredded lemon peel
  • 1/2 cup lemon juice
  • 1 1/2 cups sugar
  • 1/2 cup unsalted butter, cubed
  • 1 ten 3/4 ounce fresh or frozen pound cake, thawed and cut into 1/2-inch slices
  • 1 pint fresh raspberries 
  • 4 egg whites

Cooking Steps

  1. In a stainless steel mixing bowl or double boiler, combine whole eggs, egg yolks, lemon peel, lemon juice, and half cup of the sugar, whisking to incorporate.
  2. Put the bowl or double boiler over sauce pan of simmering water on medium heat. Whisk mixture frequently as it cooks, about 10 minutes. When mixture is thickened and lines remain in the mixture when the whisk is lifted, add the cubed butter. Continue to whisk over medium heat until the butter is incorporated and the mixture is smooth.
  3. Remove from heat and strain through a fine mesh sieve. Cover by setting plastic wrap directly on the surface of the lemon curd; chilling for 20 minutes.
  4. Preheat oven to 350°F. Use a 2 1/2 inch round cutter to cut 18 circles from the poundcake. Place six circles on a serving platter; put one and a half tablespoons of lemon curd on top of the cake circles. Top with raspberries. Top each with another cake circle, one and a half tablespoons of lemon curd, and more raspberries.
  5. Place remaining six cake circles on a baking sheet; set aside. In a stainless steel mixing bowl or double boiler combine the remaining 1 cup sugar and the egg whites. Put the bowl or double boiler over a sauce pan of simmering water; whisk until egg white mixture is warm to the touch. Remove from heat. With an electric mixer whip the mixture on high until the mixture holds soft peaks.
  6. Put the whipped whites in a piping bag with a pain tip. Pipe designs on top of the remaining cake circles. Bake 10 minutes or until meringue is golden. Top each dessert with a meringue layer and serve.
